Baked Fish

Ingredients:
4 lbs Fish of Your Choice
1 – 16 oz. can Crushed Tomatoes
1 small can Tomato Sauce
1 Finely Chopped Onion
½ Bell Pepper
2 Clove of Garlic
Salt & Pepper to Taste
2 tbsp. Flour
2 tbsp Vegetable Oil
1 cup Water
Panola Poultry Seasoning
1 tbsp. Panola Gourmet Pepper Sauce

Directions:
Brown flour in oil on low heat until golden brown (about 15 minutes, stirring often) Add onion, garlic and pepper. Cook until tender. Add tomatoes into this and let cook until oil comes of the top. (Garlic may be added to gravy whole and removed when gravy is done) Add water and Panola Gourmet Pepper Sauce and bring to a boil, let simmer slowly until done (about 15 minutes). Then season fish with Panola Poultry Seasoning and place in roasting pan. Pour the piquante mix over and bake, uncovered at 325 degrees. Baste frequently. The fish is done once it is flaky when tested with a fork.
