Marinated Grilled Vegetable Kabobs

An awesome, healthy side dish for your next family cookout.  Delicious marinated vegetables skewered and grilled.  A side dish even your kids will love!


2 Zucchini

2 Yellow Squash

1 Carton of Button Mushrooms

1 Carton of Grape Tomatoes

1 Large Red Onion

2 Bell Peppers (which ever color you prefer)

1/2 Cup Dry White Wine

1/2 Cup Olive Oil

1/2 Bottle of Panola Pepper Clearly Hot Sauce

Salt and Pepper to Taste

8-12 Wooden or Metal Skewers


Mix together the white wine, olive oil, Panola Pepper Clearly Hot Sauce, salt, and pepper in a small bowl and set aside.  Make sure all of your vegetables are thoroughly washed. Cut your zucchini and squash length wise, and then slice 1/2 inch wedges.  Cut the onion and bell peppers into 1 inch squares.  Mix all your vegetables into 2 large gallon zip lock bags.  Divide the marinade evenly between the two bags and toss gently.  Allow the veggies to marinate for a minimum of 20 minutes (can marinate over night is preparing ahead of time).  Make sure that if you are using wooden skewers you soak them in water for a minimum of one hour before use.  Skewer the marinated vegetables, alternating between the different veggies.  Grill and serve!
